~~Baking Cakes~~

Since last few weeks, i felt so tired, bored, sad, everything, mixed up. Then i baked chocolate cupcakes for an engagement in JB and buttercake, hoping that it would change my mood. At the end, i would say it worked! It was after seeing the cakes swelled up beautifully... nicely done! :)





I'm happy happy happy!!!!

This red & white theme wedding cake was ordered by Sheikh Raffie for his sister's wedding this weekend.

It was covered with marzipan and fondant.

I could never imagine that i can make marzipan by myself (after crawling to many bakery shops to find one)... What is marzipan?? It's actually a paste made from ground almond, sugar and water... Many ways to make marzipan, I chose to cook it.

It's quite a heart-broken when seeing one of our colleague walks down the lane and leaving us for the better future. Though it's the best for her, we're still going to miss her charming smile and laugh, and voice. To cover up my emotion, i make a cake especially dedicated to her. Hopefully she likes it.

Lime Frosting



~makes 24 small cupcakes~

2 tbs lime juice
400g icing sugar
1 egg white

1st, u beat the egg white and lime juice in a bowl, with a little of the icing sugar.
Gradually blend in the remainder to make a paste that just holds its shape.
If u want to make different colours (for writing/piping purposes), just turn half the mixture into a separate bowl and colour it as desired.

Meanwhile, thin the remaining white icing with a dash of water, or extra lime juice, until each thickly coats the back of the spoon.
Spoon each icing over the tops of the cupcakes (or cakes).

Voila! U can decorate it as u like...

5-min Choc Mug Cake

While google-ing around new recipe, i found this...a must try...

5 Minute Chocolate Mug Cake
you’ll need....
4 Tablespoons cake flour
4 Tablespoons sugar
2 Tablespoons cocoa
1 Egg
3 Tablespoons milk
3 Tablespoons oil
3 Tablespoons chocolate drops (optional)
1 Mug

here’s what you do....
Add dry ingredients to the mug, and mix well.
Crack an egg and add it to your mug. Be sure to mix it
well to avoid any pockets of flour in the corners.
Pour in the milk and oil and mix well.
Add the chocolate drops if you’ve got them, and a splash
of vanilla essence too.
Pop your mug into the microwave & zap for 3 minutes on
maximum power (1000watt).
Wait until the cake stops rising, and sets in the mug.
If necessary, run a knife around the sides of the mug, and
tip the still warm cake out of the mug and onto a saucer.
Sit back and enjoy with a coffee - you deserve it!

Heavenly Cakes



Last Saturday (18th Oct) I went for an open house hosted by someone we (staff of Bernama Radio24) called Pak Openg. His wife has made tonnes of kek lapis (a very popular Sarawak's cake)... they're sooooo delicious!!! And she even has cakes named 'kek belacan' and 'kek lumut'! Hehehe.... Look at it, you'll know why... but once it melted in your mouth, you will never looking back! How in the first place that she could name the cakes with such?? But, I really can't forget the 'laksa sarawak'...hmmm... Such a happy day with those who managed to go to his house, though it's raining all day long.

D Origin of Cupcakes

A cupcakes (as d American commonly used) or fairy cupcakes (as commonly known among the British) is a small cake designed to serve one person, frequently baked in a small, thin paper cup. Frosting and other cake decorations are also common on cupcakes.

A standard cupcakes uses the same ingredients as standard-size cakes -- like butter, sugar, eggs, and flour. But the difference with my cupcakes, it never uses flour :) That makes it special -- a simply prettylicious homemade cupcakes... in other words --
